It seems to me that you could do this by using two different local accounts,
each with it's own instance of Evolution running. Each one could then be
configured to pull email from a different Exchange server. 

Though I've not used Evolution myself with Exchange, if it functions the
same at Outlook connected to Exchange does, then the email client syncs
email with the server - changes to mail messages on either the client or
server end will sync across both. If this is the case, then combining the
two mailboxes in some way wouldn't be desirable, as this would sync both
client and employer emails on both servers - I suspect you would want to
avoid this, and I'm certain that the mail admins don't want this.

This is why you cannot configure more than one Exchange server at a time in
Outlook client - the client doesn't pop email, it syncs it with the server,
with full copies of everything on both ends. I suspect Evolution with the
Exchange connector works in the same way.
